- 3 tbsp olive oil extra virgin
- 2 tbsp honey
- 3 tbsp lemon juice
- salt and pepper (to taste)
- 1 tsp Dijon mustard (optional)
Whisk together the lemon juice and honey in a small bowl until well combined.
Slowly drizzle in the olive oil while continuously whisking. The dressing should emulsify and become thick and creamy.
Season with salt and pepper to taste.
Taste and adjust the seasoning, if necessary. If the dressing is too tart, add more honey. If it's too sweet, add more lemon juice.
Store the dressing in an airtight container in the refrigerator for up to 1 week. Shake well before using.
