Ingredients
  

  • 1 egg
  • 70 g oat flour (or blended oats)
  • 70 g almond or coconut milk
  • 1 tbsp olive oil
  • 0.5 tsp baking powder
  • a pinch of salt
  • a bunch of spinach

Instructions
 

  • Turn on your waffle maker to be preheated.
  • In a large bowl, mix an egg, milk and olive oil till smooth.
  • Add dry ingredients (except spinach) and combine well.
  • Transfer the waffle batter to the blender, add roughly cut spinach and blend it.
  • Place some spinach waffles dough into the waffle maker and bake according to the instructions of your waffle maker.
  • When the waffles are baked, transfer them to the plate, and place some cream cheese and smoked salmon on them. Season with freshly ground black pepper. Enjoy!
