Healthy Strawberry Crumble Bars (Vegan)

Shortbread bottom layer
- 60 g almond flour
- 55 g oat flour (blended oats)
- 1 pinch of salt
- 30 g honey (or maple syrup)
- 0.5 tsp vanilla extract or vanilla powder
- 20 g coconut oil, softened
Strawberry filling
- 340 g strawberries, destemmed & cut
- 1 tbsp honey (or maple syrup)
- 0.5 tsp fresh lemon juice
- 0.5 tbsp cornstarch
Crumble topping
- 45 g oat flour (blended oats)
- 25 g old fashioned rolled oats
- 15 g almond flour
- 30 g honey (or maple syrup)
- 15 g coconut oil, melted
Preheat the oven to 180°C.
In a large bowl mix dry ingredients for the bottom shortbread layer of the crumble. Then add honey and coconut oil and knead the dough with your hands.
Line the 4,7*7,8 inch (12*20 cm) baking dish with the baking paper and spread the shortbread dough on the bottom of it. Bake in the oven for 8mins. Then take it out and let it cool for 5 mins.
Cut strawberries, and mix them with lemon juice, honey and cornstarch. Set aside.
In a bowl mix dry crumble ingredients, then add the coconut oil and honey and mix it well with your hands till it gets a sand-like texture.
Spread the strawberry filling over the shortbread layer. Then evenly spread the crumble topping over the strawberries layer. Place it back in the oven and bake for 35 mins.
Take the crumble out of the oven and let it cool for 10 mins. Cut it into bars and enjoy!
