Tuna Tartare with Mango and Prawn Crackers

Prawn crackers
- 200 ml olive oil
- 20 prawn crackers
Tartare
- 300 g raw Ahi tuna
- 1 mango
- 4-5 scallions stems, chopped (1 tbsp)
- 2 tbsp soy sauce
- 1 tbsp sesame oil or olive oil
- 1 tsp whole grain mustard
- 2 tsp lime juice
- 1 pinch of sesame seeds (for serving)
Prawn crackers
Line the plate with a paper towel. Place a saucepan with 200 ml of oil on high heat, and let it heat up (it takes 2 mins).
Place some prawn crackers into the oil, and fry them till they are puffy (just for 15secs). Then take them out to the plate with a paper towel, and let the excess oil be absorbed. Set aside.
Tuna Tartare
Dice tuna into 0.7-1cm pieces.
Peel and dice the mango into 0.3-0.5cm pieces.
In a large bowl, mix soya sauce, mustard, sesame oil and lime juice. Mix till smooth. Chop a bunch of scallions and add to the sauce.
Transfer tuna pieces into the bowl with the sauce and mix. Then add mango and mix it all together. Set aside for marination for 30 mins.
Fill the prawn crackers with the tuna-mango tartare. Sprinkle with sesame seeds and serve immediately. Enjoy!
