- 300 g Salmon filet
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp Dijon mustard
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.25 tsp garlic powder
- 40 g cashew nuts
Preheat the oven to 200°C (400°F ).
Finely chop the cashews.
Mix together olive oil, honey, Dijon mustard, salt, black pepper and garlic powder. Then add the cashews.
Place the salmon fillets on the baking tray lined with baking paper. Evenly spread the cashew mixture over the top of each salmon fillet.
Bake the salmon for 12-15 minutes, or until the salmon is cooked through and the cashew crust is golden brown and crispy.
Remove the salmon from the oven and let it rest for a few minutes before serving. Enjoy!
