- ¼ cup coconut oil, softened
- 1 ½ tbsp honey
- ½ tsp vanilla extract
- 2 eggs
- ⅓ cup + 1 tbsp coconut flour
- ½ tsp baking powder
- 1 pinch of salt
- 30 g Sugar-free chocolate chips
Preheat the oven to 175°C (350°F ).
In a large bowl, mix together the softened coconut oil and honey. Beat in the eggs and vanilla extract until well combined.In the other bowl, mix together the coconut flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until well combined. Stir in the chocolate chips or chopped chocolate.
Line a baking tray with parchment paper. Portion out the dough with the spoon and place the cookies onto the baking tray.
Bake for 13-15 minutes or until the edges are lightly browned.
Allow the cookies to cool for a few minutes on the baking tray before transferring them to a wire rack to cool completely. Enjoy!
