Healthy Blueberry Crumble Cookies
These Blueberry crumble cookies are both nutritious and delicious! Made with wholesome ingredients they can be a healthy snack or dessert and satisfy both sweet and crunchy cravings!

- 105 g oat flour
- 25 g oats
- 40 g almond flour
- ½ tsp baking powder
- 45 g honey or maple syrup
- 3 tbsp coconut oil
- ½ tsp vanilla extract
- 40 g blueberries
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together dry ingredients (oats, oat flour, almond flour and baking powder). In the other bowl, mix wet ingredients (melted coconut oil, maple syrup or honey, and vanilla extract).
Add the wet ingredients to the dry ingredients and mix until well combined. Scoop the dough into balls and flatten slightly onto the prepared baking sheet. Gently add the blueberries to the cookies pressing to adhere.
Bake for 11-13 minutes or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!
