Ingredients
  

  • 4 cups mixed greens
  • 2 watermelon radishes, thinly sliced
  • 1 orange, peeled and segmented
  • ½ cup walnuts, roughly chopped
  • ½ cup 1/2 cup crumbled feta cheese
  • some mint leaves
  • Salt and freshly ground black pepper, to taste
  • 4 tsp Honey orange dressing

Instructions
 

  • Slice the watermelon radish, peel the orange and divide it into segments, then cut them into triangles.
  • Spread the mixed greens on a serving plate, place the watermelon radish slices and add the orange segments. Sprinkle the chopped walnuts and crumbled feta cheese over the top of the salad. Place some mint leaves over it.
  • Prepare the honey orange dressing by whisking together 1 tbsp of orange juice, 1 tsp of Dijon mustard, ½ tbsp of honey and 2 tbsp of extra-virgin olive oil until smooth. Drizzle the salad with the dressing and enjoy!
