Healthy Lemon Poppy Seed Waffles

Healthy Lemon Poppy Seed Waffles have a slightly sweet, tangy and refreshing taste with a subtle crunch from the poppy seeds! In comparison with the traditional Lemon Poppy Seed Waffles recipe, this one consists of healthy ingredients, doesn't contain refined sugar and can be a healthy breakfast option.

Ingredients
  

  • 1 cup oat flour
  • cup rice flour
  • 1 tsp baking powder
  • 1 ½ tsp poppy seeds
  • 1 egg
  • ½ cup almond milk (or milk of choice)
  • 1 tbsp honey or maple syrup
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • ¼ cup plain Greek yogurt
  • ½ tsp vanilla extract

Instructions
 

  • Preheat your waffle maker according to the manufacturer's instructions.
  • In a large mixing bowl, whisk together the oat flour, rice flour, baking powder and poppy seeds (see notes).
  • In a separate bowl, whisk together the egg, milk, honey, lemon juice, lemon zest, Greek yogurt and vanilla extract until well combined.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Spray the waffle maker with cooking spray, then scoop 1/4 cup of batter into each section of the waffle maker. Cook the waffles according to the manufacturer's instructions until golden brown and crispy.
  • Serve the waffles warm with your favorite toppings and enjoy!

Notes

You can use only oat flour or only rice flour in the recipe. I like the mixture, but it's ok to use only one type as well.
