Healthy Lemon Poppy Seed Waffles have a slightly sweet, tangy and refreshing taste with a subtle crunch from the poppy seeds! In comparison with the traditional Lemon Poppy Seed Waffles recipe, this one consists of healthy ingredients, doesn't contain refined sugar and can be a healthy breakfast option.
Preheat your waffle maker according to the manufacturer's instructions.
In a large mixing bowl, whisk together the oat flour, rice flour, baking powder and poppy seeds (see notes).
In a separate bowl, whisk together the egg, milk, honey, lemon juice, lemon zest, Greek yogurt and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and mix until just combined.
Spray the waffle maker with cooking spray, then scoop 1/4 cup of batter into each section of the waffle maker. Cook the waffles according to the manufacturer's instructions until golden brown and crispy.
Serve the waffles warm with your favorite toppings and enjoy!
Notes
You can use only oat flour or only rice flour in the recipe. I like the mixture, but it's ok to use only one type as well.
