Pistachio-crusted Salmon Bites

Ingredients
  

  • 14 oz salmon fillet, skin removed and cut into bite-sized cubes
  • ¾ cup shelled, unsalted pistachios
  • cup panko breadcrumbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • some olive oil or cooking spray, for baking

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Spray it with olive oil.
  • In a food processor, pulse the pistachios until they are coarsely ground. In a shallow dish, combine the ground pistachios, panko breadcrumbs, salt, and pepper. Mix well to combine and set aside.
  • Dice salmon filet into 1-inch pieces. Coat each salmon bite into the pistachio mixture, making sure all sides are well coated with the crust. Place the coated salmon bites onto the prepared baking sheet.
  • Bake the salmon bites in the preheated oven for 6-7 minutes, or until the crust is golden brown and the salmon is cooked through.
  • Take them out of the oven and let them cool for a couple of minutes before serving and enjoy!
