- 14 oz salmon fillet, skin removed and cut into bite-sized cubes
- ¾ cup shelled, unsalted pistachios
- ⅓ cup panko breadcrumbs
- ½ tsp salt
- ¼ tsp black pepper
- some olive oil or cooking spray, for baking
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Spray it with olive oil.
In a food processor, pulse the pistachios until they are coarsely ground. In a shallow dish, combine the ground pistachios, panko breadcrumbs, salt, and pepper. Mix well to combine and set aside.
Dice salmon filet into 1-inch pieces. Coat each salmon bite into the pistachio mixture, making sure all sides are well coated with the crust. Place the coated salmon bites onto the prepared baking sheet.
Bake the salmon bites in the preheated oven for 6-7 minutes, or until the crust is golden brown and the salmon is cooked through.
Take them out of the oven and let them cool for a couple of minutes before serving and enjoy!
