Homemade Cranberry Pistachio Granola

This healthy granola recipe features the natural sweetness of honey, the nuttiness of pistachios, the chewiness of dried cranberries, and the decadence of white chocolate. This is a perfect granola recipe!

Ingredients
  

  • 2 cups rolled oats
  • cup unsalted, shelled pistachios, roughly chopped
  • ¼ tsp salt
  • ¼ cup coconut oil, melted
  • ¼ cup honey or maple syrup
  • ½ tsp vanilla extract
  • cup dried cranberries
  • ¼ cup white chocolate chips or roughly chopped white chocolate

Instructions
 

  • Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
  • Combine the rolled oats, chopped pistachios and salt in a bowl. In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract. Pour this mixture over the dry ingredients and stir well, ensuring that everything is evenly coated.
  • Spread the granola mixture onto the prepared baking sheet in an even layer. Press down lightly with the back of a spatula to help the granola form clusters. Bake the granola in the preheated oven for 17-20 minutes, or until it turns golden brown. Stir the granola halfway through the baking time to ensure even cooking.
  • Remove the granola from the oven and let it cool completely on the baking sheet. Once it is cooled, gently break it into clusters and stir in the dried cranberries and white chocolate chips or chopped white chocolate. The other option is to melt the chocolate and pour unbroken granola with it, then sprinkle it with cranberries, wait till the chocolate is cooled and then break it into clusters.
