Healthy Apple Cinnamon Cookies

Healthy apple cinnamon cookies are a delicious treat! Made from oat flour, coconut oil, apples and cranberries they are perfect for those who are looking for a wholesome snack or dessert option!

Ingredients
  

  • 2 cups oat flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 ½ tsp ground cinnamon
  • 1 large egg
  • ¼ cup coconut oil, melted
  • ½ tsp vanilla extract
  • ¼ cup maple syrup or runny honey
  • ¾ cup finely diced apples (peeled and cored)
  • ¼ cup dried cranberries
  • some melted white chocolate or frosting (for decoration, optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Whisk together the oat flour, baking powder, salt, and cinnamon in one bowl until well combined. In a separate bowl, mix together the egg, coconut oil, vanilla extract, and maple syrup or honey.
  • Pour the wet ingredients into the dry ingredients and stir until a dough forms. Add the chopped apples and dried cranberries, and mix so they evenly distribute in the dough.
  • Form balls of dough and place them onto the prepared baking sheet. Flatten them slightly into the cookie forms. Bake for 12-14 minutes, or until the cookies are lightly golden and set.
  • Take the cookies out of the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • If you wish, decorate the cookies with white chocolate or frosting and enjoy!
