Healthy Apple Cinnamon Cookies

- 1 tsp baking powder
- ¼ tsp salt
- 1 ½ tsp ground cinnamon
- 1 large egg
- ¼ cup coconut oil, melted
- ½ tsp vanilla extract
- ¼ cup maple syrup or runny honey
- ¾ cup finely diced apples (peeled and cored)
- ¼ cup dried cranberries
- some melted white chocolate or frosting (for decoration, optional)
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Whisk together the oat flour, baking powder, salt, and cinnamon in one bowl until well combined. In a separate bowl, mix together the egg, coconut oil, vanilla extract, and maple syrup or honey.
Pour the wet ingredients into the dry ingredients and stir until a dough forms. Add the chopped apples and dried cranberries, and mix so they evenly distribute in the dough.
Form balls of dough and place them onto the prepared baking sheet. Flatten them slightly into the cookie forms. Bake for 12-14 minutes, or until the cookies are lightly golden and set.
Take the cookies out of the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
If you wish, decorate the cookies with white chocolate or frosting and enjoy!
