Baked Pistachio Donuts

Ingredients
  

The donuts

  • 40 g rice flour
  • 35 g oat flour
  • 5 g baking powder
  • 1 egg
  • 15 g olive oil
  • 15 g honey
  • 30 g plain pistachio paste
  • 80 g Greek yogurt

The glaze

  • 20 g white melted chocolate
  • 1 tsp plain pistachio paste
  • 10 g shredded pistachios

Instructions
 

  • Preheat the oven to 350°F (180°C). Whisk together the eggs, olive oil, honey, pistachio paste, and Greek yogurt until well combined.
  • In a separate bowl, whisk together the rice flour, oat flour and baking powder.
  • Pour the dry ingredients into the wet ingredients and stir until just combined. Spoon the batter into the prepared donut pan. Bake the donuts for 10-13 minutes, or until a toothpick inserted into the center comes out clean.
  • For the glaze, melt white chocolate, add some pistachio paste and mix till smooth. Chop the pistachios for decoration.
  • When the donuts are cooled, cover them with the prepared glaze and sprinkle with chopped pistachios. Enjoy!
