Baked Pistachio Donuts

The donuts
- 40 g rice flour
- 35 g oat flour
- 5 g baking powder
- 1 egg
- 15 g olive oil
- 15 g honey
- 30 g plain pistachio paste
- 80 g Greek yogurt
The glaze
- 20 g white melted chocolate
- 1 tsp plain pistachio paste
- 10 g shredded pistachios
Preheat the oven to 350°F (180°C). Whisk together the eggs, olive oil, honey, pistachio paste, and Greek yogurt until well combined.
In a separate bowl, whisk together the rice flour, oat flour and baking powder.
Pour the dry ingredients into the wet ingredients and stir until just combined. Spoon the batter into the prepared donut pan. Bake the donuts for 10-13 minutes, or until a toothpick inserted into the center comes out clean.
For the glaze, melt white chocolate, add some pistachio paste and mix till smooth. Chop the pistachios for decoration.
When the donuts are cooled, cover them with the prepared glaze and sprinkle with chopped pistachios. Enjoy!
