Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cut the fish filet into nuggets-size pieces. Set them aside.
Prepare 2 bowls. In one bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and black pepper. Beat the egg into the other bowl.
Dip each piece of fish into the beaten eggs, then coat it in the breadcrumb mixture. Press the breadcrumbs gently onto the fish to make sure they adhere.
Place the coated fish nuggets on the prepared baking sheet and spray them lightly with cooking spray or sprinkle them with some olive oil.
Bake for 10-12 minutes, or until the coating is crispy and golden brown.
Remove the fish nuggets from the oven and let them cool for a few minutes. Serve with your favorite sauce and enjoy!
