Parmesan Fish Nuggets

These baked Parmesan fish nuggets are a healthier alternative to traditional fish nuggets. They are tender and flaky on the inside and crispy and crunchy on the outside and can be a delicious appetizer or a main dish!

Ingredients
  

  • 1 lb. cod fillets or other white fish (bass, Mahi-Mahi etc.)
  • 1 cup panko breadcrumbs
  • cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 egg
  • cooking spray or some olive oil

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Cut the fish filet into nuggets-size pieces. Set them aside.
  • Prepare 2 bowls. In one bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and black pepper. Beat the egg into the other bowl.
  • Dip each piece of fish into the beaten eggs, then coat it in the breadcrumb mixture. Press the breadcrumbs gently onto the fish to make sure they adhere.
  • Place the coated fish nuggets on the prepared baking sheet and spray them lightly with cooking spray or sprinkle them with some olive oil.
  • Bake for 10-12 minutes, or until the coating is crispy and golden brown.
  • Remove the fish nuggets from the oven and let them cool for a few minutes. Serve with your favorite sauce and enjoy!
