Shrimp Stuffed Avocado

Ingredients
  

Shrimp

  • 1 lb. peeled small or medium-sized shrimp
  • ¼ tsp salt
  • ¼ tsp chili flakes
  • some black pepper
  • 1-2 tbsp olive oil

Other ingredients

  • 2 ripe avocados, halved and pitted
  • ¼ cup diced tomato
  • 2 tbsp finely diced red onion
  • 2 tbsp chopped cilantro
  • 2 tbsp lime juice
  • salt and black pepper, to taste

Instructions
 

  • Mix shrimp with salt, pepper and chili flakes. Heat a pan with olive oil over medium-high. Add the shrimp and cook for about 2-3 minutes, stirring occasionally. Set them aside.
  • Cut the avocados in half and remove the pit. Scoop out a little bit of the avocado flesh from each half to create more space for the shrimp.
  • Combine the cooked shrimp, avocado flesh, diced red onion, diced tomato, chopped cilantro, lime juice, salt, and black pepper. Mix gently until everything is evenly coated. Stuff the shrimp mixture into the avocado halves, dividing the mixture evenly among them.
  • Serve the stuffed avocado halves, garnished with additional cilantro leaves or lime wedges. Enjoy!
