Healthy Cherry Brownies

Ingredients
  

  • ¾ cup oat flour
  • 1 pinch of salt
  • ½ tsp baking powder
  • ¼ cup unsweetened cacao powder
  • 1 egg
  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup or liquid honey
  • ½ tsp vanilla extract
  • ¼ cup dark chocolate chunks or chips, 80% or more cacao
  • ½ cup cherries, pitted

Instructions
 

  • Preheat the oven to 350°F (180°C). Line a baking pan with parchment paper.
  • In a medium bowl, whisk together the oat flour, salt, baking powder, and cocoa powder until well combined. In a separate large bowl, whisk the egg, melted coconut oil, maple syrup, and vanilla extract until smooth. Add the dry ingredients to the wet ingredients and stir until well combined.
  • Fold in the dark chocolate chunks and cherries.
  • Pour the batter into the prepared baking pan and spread it evenly with a spatula. Bake for 15 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the brownies cool in the pan for 5-10 minutes. Serve and enjoy!
