- ¼ cup cilantro
- 1 cup mixed berries (blueberries and strawberries), washed and halved
- 1 avocado, diced
- ¼ cup sliced almonds (optional)
Honey Lemon Poppy seed Dressing
- ¼ cup olive oil
- 2 tbsp lemon juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1 tsp poppy seeds
- Salt and pepper to taste
Cook the quinoa. Rinse it under running water. In a saucepan, bring the quinoa and water to a boil over high heat. Reduce the heat to low, cover the saucepan with a lid, and let simmer for 15-20 minutes. Once cooked, remove the quinoa from the heat and let it cool to room temperature.
In a large bowl, combine the cooled quinoa, mixed berries, diced avocado, and chopped cilantro. Toss gently to combine.
Prepare Honey Lemon Poppy Seed Dressing. Whisk together the olive oil, lemon juice, honey, Dijon mustard, poppy seeds, salt, and pepper until well combined. Drizzle the dressing over the salad and toss until everything is evenly coated. Garnish with some sliced almonds if desire and enjoy!
