Ingredients
  

  • 4 oz. cheese tortellini
  • 1 tbsp olive oil
  • ¼ cup onion, chopped
  • ½ cup carrots, diced
  • 2 garlic cloves, minced
  • 3 cups fish or vegetable broth
  • 5 oz. crushed tomatoes
  • 1 tsp dried oregano
  • ¼ tsp red pepper flakes
  • salt and pepper to taste
  • 5 oz. shrimp, peeled and deveined
  • ¾ cup heavy cream (18% fat)
  • 2 tbsp grated Parmesan cheese
  • fresh parsley, chopped, for garnish

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrots and sauté until softened, about 3-4 minutes. Add the minced garlic and sauté for another 30 seconds until fragrant.
  • Pour in the fish or vegetable broth, diced tomatoes (including the juice), salt, pepper, oregano, and red pepper flakes. Increase the heat and bring to a boil.
  • When it starts boiling, add dry tortellini and cook according to the package instructions (for about 11 mins).
  • 3 minutes before the time of cooking of the tortellini is up, add the shrimp and let cook for the remaining 3 minutes.
  • Reduce the heat to low and add heavy cream and grated Parmesan cheese. Stir gently until the cheese is melted and the soup is heated through.
  • Pout the soup into the bowls and serve hot with fresh chopped parsley as garnish. Enjoy!
