- 4 oz. cheese tortellini
- 1 tbsp olive oil
- ¼ cup onion, chopped
- ½ cup carrots, diced
- 2 garlic cloves, minced
- 3 cups fish or vegetable broth
- 5 oz. crushed tomatoes
- 1 tsp dried oregano
- ¼ tsp red pepper flakes
- salt and pepper to taste
- 5 oz. shrimp, peeled and deveined
- ¾ cup heavy cream (18% fat)
- 2 tbsp grated Parmesan cheese
- fresh parsley, chopped, for garnish
In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrots and sauté until softened, about 3-4 minutes. Add the minced garlic and sauté for another 30 seconds until fragrant.
Pour in the fish or vegetable broth, diced tomatoes (including the juice), salt, pepper, oregano, and red pepper flakes. Increase the heat and bring to a boil.
When it starts boiling, add dry tortellini and cook according to the package instructions (for about 11 mins).
3 minutes before the time of cooking of the tortellini is up, add the shrimp and let cook for the remaining 3 minutes.
Reduce the heat to low and add heavy cream and grated Parmesan cheese. Stir gently until the cheese is melted and the soup is heated through.
Pout the soup into the bowls and serve hot with fresh chopped parsley as garnish. Enjoy!
