- 6 portobello mushrooms, stems removed
- 1-2 tbsp olive oil
- 4 oz. cream cheese
- 1 cups cilantro, chopped
- 2 garlic cloves
- salt and pepper to taste
- ½ cup cheddar cheese, grated
Preheat your oven to 350°F (175°C). Wash the mushrooms and pat them with a paper towel. Remove the stems. In a medium-sized mixing bowl, combine the softened cream cheese with the chopped cilantro, salt, pepper and minced garlic. Mix well to ensure the cilantro is evenly distributed throughout the cream cheese.
Stuff each mushroom cap with the cream cheese mixture. Make sure to evenly divide the filling among the mushroom caps. Dip the tops in a bowl with grated cheddar cheese.
Place the stuffed mushrooms on a baking sheet lined with parchment paper or lightly greased with cooking spray.
Bake the stuffed mushrooms at 350°F (175°C) for 15-20 minutes or until the mushrooms are tender and the filling is heated through. Then take them out of the oven, let them cool for some minutes and enjoy!
