Easy Shrimp Ramen Soup

- 2 tbsp olive oil
- 8 oz. sliced mushrooms
- 1 carrot, grated or sliced
- 2 cloves garlic, minced
- 4 cups stock of choice
- 1 tsp ginger powder
- 2-3 tbsp soy sauce
- 1 tsp Worcestershire sauce
- 3 oz. ramen noodles
- 5 oz. medium raw shrimp, peeled
- 2 tsp chopped scallions (for garnish)
- some sesame seeds (for garnish)
Heat the olive oil over medium-high heat in a large pot. Add the mushrooms and sauté until they release their liquid and start to brown, about 5 minutes.
Add the grated carrot and minced garlic to the pot and sauté for another 2-3 minutes, until fragrant.
Pour in the stock of your choice, and add ginger, soy sauce and Worcestershire sauce. Bring the mixture to a boil.
When it starts boiling, add noodles, reduce the heat and cook according to the Noodles package instructions. 3 minutes before the time of cooking is up, add the raw shrimp to the pot and cook for 3 minutes more, or until they turn pink and are cooked through.
Divide the cooked ramen noodles into bowls, and ladle the shrimp and broth over the top. Garnish with chopped scallions and sesame seeds. You can also serve soft-boiled egg with your ramen. Enjoy!
