Easy Shrimp Ramen Soup

Ingredients
  

  • 2 tbsp olive oil
  • 8 oz. sliced mushrooms
  • 1 carrot, grated or sliced
  • 2 cloves garlic, minced
  • 4 cups stock of choice
  • 1 tsp ginger powder
  • 2-3 tbsp soy sauce
  • 1 tsp Worcestershire sauce
  • 3 oz. ramen noodles
  • 5 oz. medium raw shrimp, peeled
  • 2 tsp chopped scallions (for garnish)
  • some sesame seeds (for garnish)

Instructions
 

  • Heat the olive oil over medium-high heat in a large pot. Add the mushrooms and sauté until they release their liquid and start to brown, about 5 minutes.
  • Add the grated carrot and minced garlic to the pot and sauté for another 2-3 minutes, until fragrant.
  • Pour in the stock of your choice, and add ginger, soy sauce and Worcestershire sauce. Bring the mixture to a boil.
  • When it starts boiling, add noodles, reduce the heat and cook according to the Noodles package instructions. 3 minutes before the time of cooking is up, add the raw shrimp to the pot and cook for 3 minutes more, or until they turn pink and are cooked through.
  • Divide the cooked ramen noodles into bowls, and ladle the shrimp and broth over the top. Garnish with chopped scallions and sesame seeds. You can also serve soft-boiled egg with your ramen. Enjoy!
