Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the oat flour and rice flour until well combined.
In a separate large bowl, cream together the softened butter and honey until light and fluffy, using an electric mixer or stand mixer. Add the egg yolk and vanilla extract to the butter mixture, and continue to beat until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Stir in the chocolate chips until they are evenly distributed throughout the dough. Chill the dough for 15 mins in the fridge.
Place the dough between two pieces of parchment paper and roll it. With 2 ring-shape cutters make the rings. Bake the cookies for 10-12 minutes, or until lightly golden brown around the edges.
Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Enjoy your delicious chocolate chip rings cookies!
