Equipment

  • 1 Food processor or blender

Ingredients
  

  • 3 cups mixed greens (Iused lettuce and arugula)
  • ½ cup fresh brocсoli inflorescences
  • 1 avocado, diced
  • 1 cucumber, diced
  • ¼ cup fresh basil
  • ¼ cup fresh cilantro
  • 2 tbsp scallions or chives
  • ¼ cup olive oil
  • ¼ cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • salt and pepper, to taste

Instructions
 

  • In a large salad bowl, combine the mixed greens, broccoli florets, avocado and cucumber.
  • Place the olive oil, Greek yogurt, lemon juice, garlic, basil, cilantro, and chives in a blender or a food processor and blend until smooth.
  • Season with salt and pepper to taste. Pour the dressing over the salad and toss until everything is evenly coated. Serve immediately and enjoy!
