Tropical Granola Bars are a nutritious and delicious breakfast or snack option! It is made with a combination of rolled oats, coconut chips, and dried fruit, and is baked with honey to give it a slightly sweet flavor.

- 3 cups rolled oats
- ¼ cup honey
- ¼ cup coconut oil, melted
- 1 tsp vanilla extract
- ⅓ cup chopped cashews
- ⅓ cup coconut chips
- ¼ cup dried mango, chopped into small pieces
Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper. In a large mixing bowl, combine the rolled oats with chopped cashews, coconut chips, and chopped dried mango and mix.
In a separate bowl, whisk together honey, melted coconut oil and vanilla extract until well combined.
Pour the wet mixture over the dry ingredients and stir until everything is well coated. Spread the granola mixture onto the prepared baking sheet in an even layer and bake for 25-30 minutes, until the granola is golden brown and crispy.
Allow the granola to cool completely on the baking sheet, then break it into clusters or cut it into bars. Enjoy!
