Shrimp Caesar Wrap

For the Wrap
- 6 oz. raw shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 clove garlic, minced
- ¼ tsp black pepper
- Salt, to taste
- 2 whole-grain tortillas
- 2 cups chopped romaine lettuce
- ½ cup cherry tomatoes or regular tomato, cut
- 2 tbsp grated Parmesan cheese
For the Caesar Dressing
- ½ cup plain Greek yogurt
- 2 tbsp grated Parmesan cheese
- 1 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste
- 1-2 tbsp water (optional)
Prepare the dressing. In a bowl, whisk together the Greek yogurt, Parmesan cheese, lemon juice, Dijon mustard, minced garlic, black pepper, and salt. If the dressing is too thick, you can thin it out by adding 1-2 tablespoons of water until it reaches the desired consistency. Set aside.
Cook the shrimp. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Add the shrimp to the skillet, season with black pepper and salt, and sauté for 2-3 minutes, or until cooked through. Remove the skillet from heat and set aside.
Assemble the wrap. Lay the tortillas on a flat surface and divide the chopped romaine lettuce evenly between them, leaving a 1-inch border around the edges. Add the cooked shrimp on top of the lettuce, then add the cherry tomatoes. Sprinkle grated Parmesan cheese over the ingredients. Drizzle Caesar dressing over the fillings, and roll up the tortillas tightly, tucking in the sides as you go. Cut the wraps in half and serve immediately. Enjoy!
