Ingredients
  

  • 1 ripe banana
  • 1,8 oz oat flour (50g)
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • 70-80 ml milk (dairy or non-dairy)
  • Oil or cooking spray for greasing the pan

Instructions
 

  • In a medium bowl, whisk together the oat flour, baking powder, and cinnamon until well combined.Add the milk to the bowl and whisk until the batter is smooth and free of lumps.
  • Peel the ripe banana and slice it into rounds that are about 1/4 inch thick.
  • Dip each banana slice into the batter, making sure it's fully coated.
  • Heat a non-stick pan over medium heat and add a small amount of oil or cooking spray to grease the pan. Once the pan is hot, place the banana slices on the pan and cook for 1-2 minutes on each side, or until they are golden brown and cooked through.
  • Transfer the pancake bites to a plate and serve warm, either plain or with your favorite toppings!
