Mini Banana Pancake Bites

- 1 ripe banana
- 1,8 oz oat flour (50g)
- ½ tsp baking powder
- ½ tsp cinnamon
- 70-80 ml milk (dairy or non-dairy)
- Oil or cooking spray for greasing the pan
In a medium bowl, whisk together the oat flour, baking powder, and cinnamon until well combined.Add the milk to the bowl and whisk until the batter is smooth and free of lumps.
Peel the ripe banana and slice it into rounds that are about 1/4 inch thick.
Dip each banana slice into the batter, making sure it's fully coated.
Heat a non-stick pan over medium heat and add a small amount of oil or cooking spray to grease the pan. Once the pan is hot, place the banana slices on the pan and cook for 1-2 minutes on each side, or until they are golden brown and cooked through.
Transfer the pancake bites to a plate and serve warm, either plain or with your favorite toppings!
