- ½ lb. fresh strawberries, hulled and chopped
- 1 tbsp honey (optional)
- 1 tsp Lemon juice (optional)
Preheat your oven to 170°F (or the lowest temperature setting) and line a baking sheet with parchment paper.
Add the chopped strawberries to a blender or food processor and blend until smooth. Add 1-2 tablespoons of honey, for a little sweetness and a squeeze of lemon juice.
Pour the strawberry puree onto the lined baking sheet and spread it out evenly with a spatula or offset spatula, making sure the layer is not too thick or too thin (aim for about 1/8 inch thickness).
Place the baking sheet in the oven and bake for 6-7 hours, or until the fruit leather is dry to the touch and no longer sticky. The exact baking time will depend on the thickness of the puree, humidity levels, and your oven temperature.
Once the fruit leather is done, remove it from the oven and let it cool completely. Then, use a pair of scissors or a knife to cut the fruit leather into strips or shapes.
Roll the fruit leather strips up and store them in an airtight container or zip-top bag at room temperature for up to a week.
