Healthy Coconut Flour Waffles

These healthier coconut flour waffles are low in carbohydrates and gluten-free! They have a fluffy texture due to the coconut flour and delicious vanilla flavor twist.

Ingredients
  

  • 2 large eggs
  • ¼ cup unsweetened almond milk or milk of choice
  • 2 tbsp melted coconut oil (or other cooking oil)
  • cup coconut flour
  • ½ tsp baking powder
  • ½ tsp vanilla extract

Instructions
 

  • Preheat your waffle iron according to the manufacturer's instructions.
  • In a mixing bowl, whisk together the eggs, almond milk or milk of choice, vanilla extract and melted coconut oil until well combined.
  • In a separate bowl, combine the coconut flour and baking powder.
  • Gradually add the dry mixture to the wet mixture, stirring until a smooth batter forms. Let the batter sit for a few minutes to allow the coconut flour to absorb the liquid and thicken.
  • Lightly grease the waffle iron with cooking spray or a small amount of coconut oil. Spoon the batter onto the preheated waffle iron, spreading it evenly. Close the lid and cook according to the waffle iron's instructions, usually for about 3-5 minutes, or until the waffles are golden brown and cooked through.
  • Carefully remove the waffles from the iron and serve them warm with your fav toppings!
