In a separate bowl, combine the coconut flour and baking powder.
Gradually add the dry mixture to the wet mixture, stirring until a smooth batter forms. Let the batter sit for a few minutes to allow the coconut flour to absorb the liquid and thicken.
Lightly grease the waffle iron with cooking spray or a small amount of coconut oil. Spoon the batter onto the preheated waffle iron, spreading it evenly. Close the lid and cook according to the waffle iron's instructions, usually for about 3-5 minutes, or until the waffles are golden brown and cooked through.
Carefully remove the waffles from the iron and serve them warm with your fav toppings!
