Equipment

  • 1 Food processor or blender

Ingredients

  • 4 cups diced seedless watermelon
  • 2 tbsp honey (adjust according to sweetness preference)
  • 2 tbsp lemon juice

Instructions

  • Cut a ripe watermelon into chunks and remove the seeds. Place the watermelon chunks into a blender or food processor, add honey and lemon juice. Blend until smooth to create a watermelon puree.
  • Cut the round of the watermelon, delete the eatable part from the round and place the bark on the foil. Insert the ice cream sticks into the sides of the watermelon bark.
  • Pour the mixture inside the bark and add some blueberries so they seem like watermelon seeds. Transfer it to the freezer for 5-6 hours.
  • After the ice cream has reached the desired texture, it's ready to be served. Cut the round into 4 pieces and enjoy!
