Ingredients
  

  • ½ cup rolled oats
  • ½ ripe banana, mashed
  • ¼ cup strawberries, diced
  • ¼ cup milk (dairy or plant-based)
  • 1 tsp honey or maple syrup
  • ½ tsp vanilla extract
  • ¼ tsp baking powder
  • Pinch of salt
  • Additional strawberries for topping (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine rolled oats, mashed ripe banana, diced strawberries, milk (dairy or plant-based), honey or maple syrup (optional), vanilla extract, baking powder, and a pinch of salt. Stir well until all the ingredients are evenly combined.
  • Grease an oven-safe baking dish or individual ramekins with a light coating of oil or cooking spray. Pour the oatmeal mixture into the greased baking dish or divide it evenly among the individual ramekins. Top the oatmeal with some additional diced strawberries for extra flavor and presentation.
  • Place the baking dish or ramekins in the oven and bake for about 25-30 minutes, or until the oatmeal is set and slightly golden on top. Once baked, remove the oatmeal from the oven and let it cool for a few minutes before serving. Serve the strawberry oatmeal warm and enjoy!
