Delicious Shrimp Quesadilla
Shrimp Quesadilla is a delicious Mexican dish that combines succulent shrimp, melted cheese, and bell peppers inside a tortilla. - 1 lb. shrimp, peeled and deveined
- some oil for frying
- 2 cups bell peppers, sliced
- ¼ cup onion, chopped
- 1 tsp garlic powder
- ½ tsp ground cumin
- ½ tsp paprika
- ¼ tsp chili flakes (adjust to your desired level of heat)
- salt and pepper, to taste
- 2 cups shredded cheese (cheddar, Monterey Jack, or a Mexican cheese blend)
- 4 4 medium-sized tortillas
In a skillet, heat a bit of oil over medium heat. Add the sliced bell pepper and onion, and sauté until they are softened and lightly caramelized, about 3-5 minutes.
Add the shrimp, garlic powder, cumin, paprika, and chili flakes to the skillet. Sauté for 3-4 minutes, or until the shrimp turn pink and opaque. Add salt and pepper, to taste. Remove from heat and set aside.
Preheat a large non-stick skillet or griddle over medium heat. Place a tortilla on the preheated skillet. Sprinkle the shredded cheese evenly over one half of the tortilla. Arrange 2-3 tbsp of bell peppers and shrimp filling over the cheese layer and cover with some more cheese. Be sure not to overfill the quesadilla. Fold the tortilla in half, pressing gently to seal the edges together.
Cook the quesadilla for 2-3 minutes on each side, or until it turns golden brown and the cheese has melted. Repeat this process with the remaining tortillas and filling ingredients.
Once cooked, transfer the quesadillas to a cutting board and let them cool for a minute. Then, slice each quesadilla into wedges. Serve the shrimp quesadillas warm with optional toppings such as sliced jalapeños, chopped cilantro, sour cream, guacamole, or salsa.
