Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk together the rice flour, oat flour and baking powder.
In a separate bowl, whisk together the egg, melted coconut oil, honey or maple syrup, and Greek yogurt until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix. Gently fold in the finely chopped strawberries into the batter.
Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
Bake in the preheated oven for about 20-22 minutes, or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.
While the donuts are baking, prepare the strawberry glaze. Melt the white chocolate and mix it with the mashed strawberries until well combined. For a lighter option replace chocolate with plain Greek yogurt.
Once the donuts have cooled for a few minutes, remove them from the pan and place them on a wire rack to cool completely.
Dip each cooled donut into the strawberry glaze, allowing any excess glaze to drip off. Place the glazed donuts back on the wire rack to allow the glaze to set for a few minutes. Serve and enjoy!
