Grilled Peach Salad

Grilled Peach Salad is a harmonious combination of sweet, peppery, nutty, and tangy flavors, along with a mix of textures. This salad is delicious as it is beautiful!

Ingredients
  

For the Salad

  • 2 ripe peach
  • 1 tbsp olive oil (for grilling)
  • 2 cups arugula
  • ΒΌ cup walnuts, toasted
  • 2 tbsp shaved Parmesan cheese

For the Dressing

  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar (or vinegar alternative of your choice)
  • Salt and pepper to taste

Instructions
 

  • Cut the peach in halves and remove the pit, cut it inro wedges. Lightly brush the peach wedges with olive oil.
  • Place the peach wedges on the preheated grill or grill pan, cut-side down, and cook for about 2-3 minutes or until grill marks appear and the peach is softened. Flip and cook for an additional 2 minutes. Remove from the grill and let it cool slightly.
  • In the meantime, prepare the dressing by whisking together the extra-virgin olive oil, balsamic vinegar (or vinegar alternative), salt, and pepper in a small bowl. Adjust the seasoning to your taste.
  • On a large serving plate, spread the arugula. Evenly spread grilled peach slices, and toasted walnuts. Drizzle the dressing over the salad. Sprinkle the shaved Parmesan cheese over the top od the salad. Serve the grilled peach salad immediately and enjoy!
