Healthy Blueberry Pancakes

Ingredients
  

  • ½ cup rice flour
  • 2 tbsp rice flour
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • ½ cup almond milk (or any other plant-based milk)
  • 1 egg
  • cup fresh blueberries
  • some oil or cooking spray (for frying)
  • some honey or maple syrup (for serving)

Instructions
 

  • In a bowl, whisk the eggs until well beaten. Add the almond milk and vanilla extract. Then add the rice flour and baking powder. Whisk until well mixed. Gently fold the blueberries into the pancake batter.
  • Preheat a non-stick skillet or griddle over medium heat. Lightly coat the surface with cooking spray or a small amount of oil.
  • Pour a scoop of the pancake batter onto the preheated skillet, using about 1/4 cup of batter per pancake. Cook until bubbles start to form on the surface of the pancake, then flip and cook for another 1-2 minutes on the other side until golden brown.
  • Serve the healthy blueberry pancakes warm with additional fresh blueberries, a drizzle of honey or maple syrup, and any other desired toppings like sliced bananas, chopped nuts, or a dollop of Greek yogurt.
