Сucumber Sushi Rolls
Cucumber Salmon sushi rolls, or cucumber sushi wraps, are a creative twist on traditional sushi rolls! These rolls are made with cream cheese, salmon, avocado and thinly sliced cucumber that acts as a substitute for nori, providing a refreshing and crunchy outer layer to the sushi rolls.

- 2 large cucumber
- 4 oz. cream cheese
- 4 oz. sushi-grade salmon, thinly sliced
- 1 ripe avocado, sliced (optional)
- 1 tbsp sesame seeds, for garnish
- some soy sauce (as dipping)
Slice the cucumber lengthwise into thin strips using a mandoline slicer or a sharp knife. Pat the cucumber strips dry with a paper towel to remove excess moisture.
Lay a cucumber strip flat each by each so they create a large surface. Spread a layer of cream cheese onto 1/3 of the cucumber's surface. Place a few slices of salmon and avocado (if using) on top of the cream cheese.
Carefully roll up the cucumber surface, keeping the filling secure inside so they make a sushi roll. Once athe roll is assembled, cut it inro pieces and sprinkle sesame seeds over the rolls as a garnish. Serve the rice-less cucumber sushi rolls as they are or with soy sauce, wasabi, and pickled ginger on the side for dipping.
