- 2-3 carrots
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 clove garlic, minced (optional)
- 1 tbsp scallions, thinly sliced (optional)
- Sesame seeds, for garnish (optional)
Peel the carrots to remove the outer skin, if desired. Using a spiralizer or julienne peeler, create long, thin strands of carrot noodles. Place the carrot noodles in a bowl.
In a separate small bowl, whisk together the soy sauce, sesame oil, minced garlic, and scallions.
Pour the soy sauce mixture over the carrot noodles and toss well to coat the noodles evenly. Let the carrot noodles marinate in the sauce for about 10-15 minutes to allow the flavors to meld together.
Transfer the carrot noodles to a serving dish. Garnish with sesame seeds and enjoy!
