Ingredients
  

  • 2-3 carrots
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 clove garlic, minced (optional)
  • 1 tbsp scallions, thinly sliced (optional)
  • Sesame seeds, for garnish (optional)

Instructions
 

  • Peel the carrots to remove the outer skin, if desired. Using a spiralizer or julienne peeler, create long, thin strands of carrot noodles. Place the carrot noodles in a bowl.
  • In a separate small bowl, whisk together the soy sauce, sesame oil, minced garlic, and scallions.
  • Pour the soy sauce mixture over the carrot noodles and toss well to coat the noodles evenly. Let the carrot noodles marinate in the sauce for about 10-15 minutes to allow the flavors to meld together.
  • Transfer the carrot noodles to a serving dish. Garnish with sesame seeds and enjoy!
