- 3 cucumbers
- 1-2 cloves garlic, minced
- 1 tsp chili flakes
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp oil
- 1 tsp honey
- 1 tsp toasted sesame seeds (optional)
- Fresh cilantro for garnish (optional)
Take one cucumber and place it horizontally between two chopsticks, aligning the chopsticks along the length of the cucumber. Using a sharp knife, make thin diagonal slices on the top side of the cucumber. Then, flip the cucumber over and make perpendicular slices on the other side of the cucumber. Cut straight down into the cucumber, creating slices that cross the diagonal cuts you made earlier. Place the cucumber into the bowl and set aside.
In a separate small bowl, combine the minced garlic, chili flakes, soy sauce, rice vinegar, oil, and honey. Mix well until the ingredients are well combined.
Pour the dressing over the cucumber slices and toss gently to coat them evenly. Let the cucumbers marinate in the dressing for about 10-15 minutes to allow the flavors to meld together.
Sprinkle toasted sesame seeds over the salad if desired. Garnish the salad with fresh cilantro. Serve cold and enjoy!
