Cheese Zucchini Roll Ups

Cheese Zucchini Roll Ups or as I call them, "Zucchini Parmigiana," offer a delightful medley of flavors and textures. The zucchini pairs perfectly with the rich, savory notes of the melted aged Gouda and Parmesan cheeses, creating a creamy, cheesy dish that's incredibly satisfying.

Ingredients
  

  • 2 zucchinis
  • 1 oz. aged Gouda cheese, sliced
  • ½ cup Parmesan cheese, grated
  • ½ cup breadcrumbs
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley or basil for garnish (optional)

Instructions
 

  • Preheat your oven to 200 degrees Celsius (approximately 392 degrees Fahrenheit) and grease a baking dish with some olive oil or cooking spray.
  • Slice the zucchinis into thin strips using a mandoline slicer or a sharp knife.
  • In a separate bowl, mix the grated Parmesan cheese with the breadcrumbs. Brush each zucchini strip with olive oil, then dip it into the Parmesan and breadcrumb mixture, ensuring it's well coated.
  • Place a slice of aged Gouda cheese on each strip, then carefully roll the zucchini up and place it into the greased baking dish. Repeat this process until all the zucchini strips are used up.
  • Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly, and the zucchini is tender. Let it cool for a few minutes before serving. Garnish with chopped fresh basil or parsley and enjoy!
