- 1 cup frozen pineapple chunks
- 1 cup frozen banana slices
- ½ cup heavy cream or yogurt
- 1 tsp vanilla extract
- 2 tbsp honey or maple syrup
- ¼ cup shredded coconut
Place the frozen pineapple chunks, frozen bananas, heavy cream, vanilla extract, and honey or maple syrup into a blender or food processor. Blend the ingredients until they are smooth and creamy, scraping down the sides as needed. The mixture should resemble the texture of soft-serve ice cream.
Add the shredded coconut to the blender and pulse a few times to incorporate it into the mixture. This will add a hint of coconut flavor and some texture to the ice cream.
Taste the mixture and adjust the sweetness by adding more honey or maple syrup if desired. Transfer the mixture to a lidded container (or use half of pineapple as a boat for the ice cream) and freeze for at least 3 hours, or until the ice cream reaches the desired firmness.
Once the ice cream is set, scoop it into bowls or cones and serve. Enjoy the creamy and tropical goodness of homemade Pina Colada Ice Cream!
