Ingredients
  

  • 1 cup frozen pineapple chunks
  • 1 cup frozen banana slices
  • ½ cup heavy cream or yogurt
  • 1 tsp vanilla extract
  • 2 tbsp honey or maple syrup
  • ¼ cup shredded coconut

Instructions
 

  • Place the frozen pineapple chunks, frozen bananas, heavy cream, vanilla extract, and honey or maple syrup into a blender or food processor. Blend the ingredients until they are smooth and creamy, scraping down the sides as needed. The mixture should resemble the texture of soft-serve ice cream.
  • Add the shredded coconut to the blender and pulse a few times to incorporate it into the mixture. This will add a hint of coconut flavor and some texture to the ice cream.
  • Taste the mixture and adjust the sweetness by adding more honey or maple syrup if desired. Transfer the mixture to a lidded container (or use half of pineapple as a boat for the ice cream) and freeze for at least 3 hours, or until the ice cream reaches the desired firmness.
