Ingredients
  

  • 1 cup stale crusty bread, torn into bite-sized pieces
  • 1 cup cherry tomatoes, cut into halves
  • 2 small cucumbers, sliced
  • ½ small red onion, thinly sliced
  • some Fresh basil leaves, torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the torn bread, tomatoes, cucumber slices, red onion, and torn basil leaves.
  • In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.
  • Pour the dressing over the bread and vegetable mixture. Toss gently to coat all the ingredients evenly. Let the salad sit for about 15 minutes to allow the bread to soak up the flavors.
  • Before serving, give the salad a final toss to redistribute the dressing and ensure the bread is evenly moistened. Garnish with additional torn basil leaves, if desired. Serve the Panzanella and enjoy!
