  • ¼ cup grated or shaved Parmesan cheese

  • Wash and dry the greens thoroughly. Cut them and place them in a large salad bowl.
  • Zest the lemon using a zester or fine grater, being careful to avoid the bitter white pith. Cut the lemon in half and squeeze the juice into a small bowl. Remove any seeds that may have fallen in. Add the extra virgin olive oil and zest to the lemon juice. Whisk together until well combined.
