Green gazpacho is a refreshing and vibrant variation of the traditional Spanish gazpacho soup. Unlike the classic red gazpacho made with tomatoes, green gazpacho features a blend of fresh green vegetables and herbs.

- 2 cucumbers, roughly chopped
- 2 green bell peppers, seeded and roughly chopped
- 1 avocado, peeled and pitted
- 2 tbsp scallions, chopped
- ½ cup fresh parsley leaves
- 2 tbsp lemon juice
- 2 cloves of garlic
- salt and pepper
- 1 cup water
- Drizzle of olive oil
- crumbled fets cheese (for serving)
In a blender or food processor, combine the cucumbers, green bell peppers, avocado, scallions, parsley, lemon juice, garlic, and water. Blend until smooth and creamy.
Once blended, taste the gazpacho and season with salt and pepper according to your preference. Adjust the consistency by adding more water if desired.
Refrigerate gazpacho for 1 hour to allow the flavors to meld and the soup to chill.
Before serving, give the gazpacho a good stir. Pour into the serving bowls and garnish with chopped fresh herbs, crumbled feta and a drizzle of olive oil. Serve the green gazpacho chilled as a refreshing appetizer or light meal and enjoy!
