Ingredients
  

  • 2 cucumbers, roughly chopped
  • 2 green bell peppers, seeded and roughly chopped
  • 1 avocado, peeled and pitted
  • 2 tbsp scallions, chopped
  • ½ cup fresh parsley leaves
  • 2 tbsp lemon juice
  • 2 cloves of garlic
  • salt and pepper
  • 1 cup water
  • Drizzle of olive oil
  • crumbled fets cheese (for serving)

Instructions
 

  • In a blender or food processor, combine the cucumbers, green bell peppers, avocado, scallions, parsley, lemon juice, garlic, and water. Blend until smooth and creamy.
  • Once blended, taste the gazpacho and season with salt and pepper according to your preference. Adjust the consistency by adding more water if desired.
  • Refrigerate gazpacho for 1 hour to allow the flavors to meld and the soup to chill.
  • Before serving, give the gazpacho a good stir. Pour into the serving bowls and garnish with chopped fresh herbs, crumbled feta and a drizzle of olive oil. Serve the green gazpacho chilled as a refreshing appetizer or light meal and enjoy!
