In a mixing bowl, whisk together the flour, and salt until well combined. In a separate bowl, whisk together the milk, egg, honey, vanilla extract and oil.
Gradually pour the wet ingredients into the dry ingredients while whisking continuously to form a smooth crepe batter. Make sure there are no lumps. Add pink color and mix.
Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with coconut oil or cooking spray. Pour about 1/4 cup of the crepe batter into the hot pan, tilting the pan to spread the batter evenly and create a thin layer.
Cook the crepe for about 1 minute on one side until the edges begin to lift and the surface appears dry. Then, flip the crepe and cook the other side for an additional minute.
Remove the cooked crepe from the pan and repeat the process with the remaining batter until you have made all the crepes. Stack the pink crepes on a plate and serve them warm with your favorite toppings. Enjoy!
