Black Bean Chocolate Truffles

Ingredients
  

  • ½ can (7oz.) black beans, drained and rinsed
  • ¼ cup cocoa powder (unsweetened)
  • 2 tbsp pure maple syrup or honey (adjust to your desired sweetness)
  • ½ tsp pure vanilla extract
  • A pinch of salt
  • some additional cocoa (for covering)

Instructions
 

  • In a food processor or blender, combine the drained and rinsed black beans, cocoa powder, pure maple syrup or honey, pure vanilla extract, and a pinch of salt. Blend until smooth and creamy, scraping down the sides as needed. The mixture should resemble a thick and rich chocolate dough.
  • Transfer the chocolate mixture to a bowl, cover it with plastic wrap, and refrigerate for at least 30 minutes to firm up the mixture.
  • Once the mixture is chilled and firm, take small portions and roll them into bite-sized truffles between your palms. You can make them as big or small as you like. Roll the truffles in cocoa powder to create covering. Enjoy!
