Dip each fish piece into the flour mixture, coating it lightly on all sides. Next, dip the floured fish piece into the beaten eggs, ensuring it is coated evenly. Finally, roll the fish piece in the crushed cornflakes, pressing gently to adhere the cornflakes to the fish. Make sure the fish is fully coated with the cornflakes.
Line a baking sheet with parchment and spray it with oil. Arrange the fish bits on the sheet and bake for about 7 minutes or until they achieve a beautiful golden brown and crispy texture.
Serve the cornflake-crusted fish bites immediately with your favorite dipping sauce, such as tartar sauce, lemon aioli, or a squeeze of fresh lemon juice. Enjoy!
