Cornflake crusted Fish Bites

Ingredients
  

  • 1 lb. white fish fillets (cod, haddock, bass or any firm white fish)
  • 1 cup all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 eggs, beaten
  • 2 cups cornflakes, crushed into small pieces
  • Vegetable oil, for baking

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • Cut the white fish fillets into bite-sized pieces, about 1-2 inches in size. Pat them dry with paper towels to remove any excess moisture.
  • In a shallow dish or plate, mix the all-purpose flour with salt and black pepper. In another shallow dish or bowl, beat the eggs. Place the crushed cornflakes in a third shallow dish or plate.
  • Dip each fish piece into the flour mixture, coating it lightly on all sides. Next, dip the floured fish piece into the beaten eggs, ensuring it is coated evenly. Finally, roll the fish piece in the crushed cornflakes, pressing gently to adhere the cornflakes to the fish. Make sure the fish is fully coated with the cornflakes.
  • Line a baking sheet with parchment and spray it with oil. Arrange the fish bits on the sheet and bake for about 7 minutes or until they achieve a beautiful golden brown and crispy texture.
  • Serve the cornflake-crusted fish bites immediately with your favorite dipping sauce, such as tartar sauce, lemon aioli, or a squeeze of fresh lemon juice. Enjoy!
