Ingredients
  

  • 1 cup cottage cheese
  • ¼ cup honey
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil (melted)
  • ½ cup chocolate protein powder
  • ¼ cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the cottage cheese, honey, vanilla extract, and melted coconut oil. Mix well until the ingredients are thoroughly combined.
  • Gradually add the chocolate protein powder to the wet ingredients. Stir until the protein powder is fully incorporated and the mixture forms a smooth batter. Gently fold in the chocolate chips, distributing them evenly throughout the batter.
  • Using a tablespoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them a few inches apart. Flatten each cookie slightly with the back of a spoon or your fingers to your desired thickness, as these cookies won't spread much during baking.
  • Bake the cookies in the preheated oven for about 10-12 minutes or until they are set and slightly golden around the edges. Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
