- ¼ cup honey
- 1 tsp vanilla extract
- 2 tbsp coconut oil (melted)
- ½ cup chocolate protein powder
- ¼ cup chocolate chips
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the cottage cheese, honey, vanilla extract, and melted coconut oil. Mix well until the ingredients are thoroughly combined.
Gradually add the chocolate protein powder to the wet ingredients. Stir until the protein powder is fully incorporated and the mixture forms a smooth batter. Gently fold in the chocolate chips, distributing them evenly throughout the batter.
Using a tablespoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them a few inches apart. Flatten each cookie slightly with the back of a spoon or your fingers to your desired thickness, as these cookies won't spread much during baking.
Bake the cookies in the preheated oven for about 10-12 minutes or until they are set and slightly golden around the edges. Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
