- 2 zucchini, cut in half lengthwise
- 1 cup shrimp, peeled and deveined
- 2 tbsp heavy cream
- 2 tbsp grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- 1 tsp extra-virgin olive oil
- 1 tsp dried oregano
- 1 tbsp butter
- 1 tomato, chopped
- 2 cloves garlic, minced
Preheat the oven to 375°F (190°C).
Use a spoon to carefully scoop out the flesh from each zucchini half, leaving a hollow "boat."
In a skillet over medium heat, heat the olive oil. Add minced garlic, and chopped tomato. Sauté for a few minutes until the zucchini is tender and the tomato starts to soften.
Add the shrimp and cook until they turn pink and are cooked through. Decrease the heat to low.
Stir in the heavy cream, grated Parmesan, and dried oregano. Mix well to combine all the ingredients.
Place the zucchini halves in a baking dish. Divide the shrimp and zucchini mixture evenly among the zucchini boats, pressing it down gently. Bake in the preheated oven for about 15-20 minutes, or until the zucchini is tender.
Once cooked, top each zucchini boat with shredded mozzarella cheese and bake for additional 2-3 minutes until the cheese is melted. Remove from the oven and garnish the stuffed zucchini boats with freshly chopped parsley. Enjoy!
