Ingredients
  

  • 2 zucchini, cut in half lengthwise
  • 1 cup shrimp, peeled and deveined
  • 2 tbsp heavy cream
  • 2 tbsp grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 tsp extra-virgin olive oil
  • 1 tsp dried oregano
  • 1 tbsp butter
  • 1 tomato, chopped
  • 2 cloves garlic, minced

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Use a spoon to carefully scoop out the flesh from each zucchini half, leaving a hollow "boat."
  • In a skillet over medium heat, heat the olive oil. Add minced garlic, and chopped tomato. Sauté for a few minutes until the zucchini is tender and the tomato starts to soften.
  • Add the shrimp and cook until they turn pink and are cooked through. Decrease the heat to low.
  • Stir in the heavy cream, grated Parmesan, and dried oregano. Mix well to combine all the ingredients.
  • Place the zucchini halves in a baking dish. Divide the shrimp and zucchini mixture evenly among the zucchini boats, pressing it down gently. Bake in the preheated oven for about 15-20 minutes, or until the zucchini is tender.
  • Once cooked, top each zucchini boat with shredded mozzarella cheese and bake for additional 2-3 minutes until the cheese is melted. Remove from the oven and garnish the stuffed zucchini boats with freshly chopped parsley. Enjoy!
