Ingredients
  

  • 3 oz. oats (approximately 1/2 cup)
  • 1 ripe banana
  • 2 tbsp shredded coconut
  • 1 tbsp peanut butter
  • 1 tsp honey
  • 1 tsp vanilla extract
  • 1 oz. chocolate chips

Instructions
 

  • Start by mashing the ripe banana in a mixing bowl until it achieves a smooth consistency, free from any lumps. Blend the peanut butter, vanilla extract and honey into the banana mixture. Introduce the oats and shredded coconut and stir until they are completely coated and evenly distributed within the mixture. Incorporate the chocolate chips.
  • Using either your hands or a spoon, take small portions of the mixture and shape them into bite-sized balls. Place these oat bites onto a plate or tray that's been lined with parchment paper. Allow them to chill in the refrigerator for around 20 minutes.
  • Preheat your oven to 350°F (175°C). After the oat bites have chilled, transfer them onto a baking sheet lined with parchment paper. Bake the Coconut Banana Oat Bites with Chocolate Chips for approximately 15 to 18 minutes. Keep in mind that the exact baking time can vary based on your oven and your preferred level of doneness. Look for a golden brown exterior on the oat bites.
  • Once baked, remove the oat bites from the oven and allow them to cool on the baking sheet for a few minutes. After the oat bites have cooled down, they're ready to be enjoyed!
