Ingredients
  

Salmon

  • ½ lb. salmon fillets, diced
  • 1 tbsp olive oil
  • 1 tsp chili flakes
  • ½ tsp cumin
  • Salt and pepper to taste
  • 4 small tortillas (corn or flour)

Pineapple salsa

  • 1 cup diced fresh pineapple
  • ¼ cup diced red onion
  • ¼ cup chopped cilantro
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions
 

  • In a mixing bowl, combine diced pineapple, red onion, chopped cilantro, lime juice, and a pinch of salt and pepper. Thoroughly mix the ingredients together and set the salsa aside.
  • Dice the salmon fillet into cubes. In a small bowl, create a spice mixture by combining olive oil, chili flakes, cumin, salt, and pepper. Ensure that the salmon cubes are evenly coated by brushing them with the spice mixture.
  • Preheat a pan over medium-high heat. Place the salmon cubes on the pan and cook for approximately 2 minutes, or until the salmon is fully cooked. After cooking, remove the salmon from the pan and allow it to rest for a minute
  • Warm the tortillas on the pan for about 20-30 seconds per side. Spoon a portion of the pineapple salsa onto each tortilla and then arrange the salmon cubes on top of the salsa.
