Preheat your oven to 400°F (200°C).
Slice the washed potatoes into thin, even rounds using a sharp knife or a mandoline slicer. Thinner slices will result in crispier chips.
Place the potato slices into a bowl and add water. Soak them in water for about 10 minutes. Then drain the slices and pat them dry with a paper towel.
Place the slices into a bowl, drizzle them with olive oil and sprinkle with paprika, salt and pepper.
Arrange the potato slices in a single layer on baking sheets lined with parchment paper. Make sure not to overlap the slices to ensure even baking.
Place the baking sheets in the preheated oven. Bake the potato slices for about 15-20 minutes, then flip them over using tongs or a spatula. Continue baking for another 10-15 minutes or until the potato slices are golden brown and crispy. Keep a close eye on them during the last few minutes to prevent over-browning.
Once the potato chips are baked to your desired level of crispiness, remove them from the oven and let them cool on the baking sheets for a few minutes. This will help them become even crispier. Transfer the baked potato chips to a serving bowl or plate. Sprinkle with a bit more salt and any additional seasonings if desired. Enjoy!
