Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine cottage cheese, egg, all-purpose flour, cheddar cheese and a pinch of salt. Stir until a dough forms. The dough should be soft but not overly sticky.
Take portions of the dough and shape them into small buns or rolls, about 1 to 2 inches in diameter. Place them on the prepared baking sheet, leaving some space between each bun.
Sprinkle mixed sesame seeds over the tops of the buns. Bake the cheese buns in the preheated oven for approximately 20 minutes or until they are golden brown and have a slightly crispy crust.
Remove the cheese buns from the oven and let them cool slightly before serving. They are delicious when served warm.
